Description
Indulge in bakery-worthy 🍪 Blueberry White Chocolate Chip Cookies 🤍! Our recipe creates irresistible soft, chewy bites with sweet white chocolate and juicy blueberries.
Ingredients
- Unsalted Butter: 1 cup (226g), softened
- Sugars: 1/2 cup (100g) granulated, 3/4 cup (150g) packed light brown
- Eggs: 1 large whole egg + 1 large egg yolk
- Vanilla Powder: 1.5 teaspoons
- All-Purpose Flour: 2 1/4 cups (270g)
- Leavening & Salt: 1 teaspoon baking soda, 1/2 teaspoon salt
- White Chocolate Chips: 1 cup (170g)
- Fresh Blueberries: 1 cup (150g)
Instructions
- Step 1: In a large bowl, cream together the softened butter, granulated sugar, and light brown sugar with an electric mixer until light and fluffy (about 2-3 minutes). Beat in the whole egg, then the extra egg yolk, followed by the vanilla bean paste, scraping down the sides of the bowl as needed, until fully incorporated.
- Step 2: In a separate medium bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined and no streaks of flour remain. Be careful not to overmix.
- Step 3: Gently fold in the white chocolate chips and fresh blueberries until evenly distributed throughout the dough. (If using frozen blueberries, do not thaw; mix them in directly.) Cover the bowl with plastic wrap and chill the dough in the refrigerator for at least 30 minutes, or up to 2 hours, for best results and to prevent over-spreading.
- Step 4: Preheat oven to 375°F (190°C) and line baking sheets with parchment paper. Scoop rounded tablespoons (about 2-3 tablespoons per cookie) of chilled dough onto the prepared baking sheets, leaving about 2 inches between cookies.
- Step 5: Bake for 10-14 minutes, or until the edges are golden brown and the centers are still slightly soft and puffy. For a chewier cookie, slightly underbake. Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- Keep your cookies wonderfully soft by storing them in an airtight container at room temperature for up to 3-4 days, or freeze them for a delicious treat anytime.
- To revive that fresh-baked warmth, pop a cookie in the microwave for 10-15 seconds or warm briefly in a 300°F (150°C) oven until just soft.
- Enjoy these delightful cookies warm with a scoop of vanilla bean ice cream or a glass of cold milk for a truly indulgent dessert experience.
- Don't skip chilling the dough for at least 30 minutes; this crucial step helps prevent spreading, intensifies flavor, and results in that perfect bakery-worthy chew.
